Liver is an extremely nutritious food being an excellent source of high-quality protein, vitamin A, B vitamins, folic acid and iron. It is also very cheap and quick and easy to prepare which makes it ideal for those pressed for time.
It’s an ideal food as part of an LCHF lifestyle.
- 2 streaky rashers, chopped small
- 4 pieces of lambs liver, chopped
- 1 onion sliced
- 1 dessertspoon of butter
- Fry the rashers and onion in the butter over a medium heat until softened, which should take about 10 minutes
- Add the liver and cook for a further 5 minutes until cooked through
