Kefir: A Super Probiotic

Gut health is getting a lot of air time recently, being linked to overall resistance to chronic health problems. Fermented foods are being reported as hugely beneficial to gut health.

Kefir is a fermented milk drink made with kefir “grains”, a yeast/bacterial fermentation starter. It typically contains about 30 different microorganisms, making it a much powerful probiotic than commercial manufactured ones.  The longer the fermentation time, the more lactose eaten up by the organisms, the more sour the ferment, the lower the dietary carbohydrate count.

Kefir grains are very easily used to make fermented dairy products (kefir yoghurt and a fizzy kefir drink) using full fat milk. All that’s needed is to pour a cup of milk onto the grains and leave for 24 hours at room temperature. The microorganisms in the kefir grains multiply and ferment the sugars in the milk.

Then strain and your prebiotic is ready! Add a small amount of fruit or seeds and blend to get the flavour you want. Excellent an an ingredient in a breakfast smoothie with low carb muesli.
