Fish pie is so very comforting on a cold winters day. This is really delicious and moreish.

  • 50ml of double cream or full fat milk

Method:

  • Gently sautee the onion, carrots, celery and garlic in some fat (any good fat of your choice, not vegetable oil) in a heavy based pot
  • Add the hot stock, olives, bay leaf and thyme and bring the pot to simmering for about 15 minutes until the vegetables are soft
  • Add the fish and cook for another 5 minutes
  • Now add the cream or milk, cherry tomatoes and season. Beware of boiling as the milk may curdle
  • Transfer to a heat proof dish, top with the cauli mash and then top again with the sliced cheddar cheese
  • Place under a hot grill for about 15-20 minutes until the cheese is bubbling
  • Serve with non starchy veggies
