Fish pie is so very comforting on a cold winters day. This is really delicious and moreish.
Ingredients:
- 1 finely chopped onion
- 2 cloves of garlic fined minced
- 1 small carrot finely chopped
- 2 sticks of celery finely chopped
- 100g of olives
- 100g of cherry tomatoes
- 450g of mixed fresh fish (a mix of smoked and non smoked is ideal)
- 200ml of stock or water
- 50ml of double cream or full fat milk
- a handful of thyme
- A bay leaf
- 500g (approx) of cauli mash
- 150 of cheddar cheese sliced thinly
Method:
- Gently sautee the onion, carrots, celery and garlic in some fat (any good fat of your choice, not vegetable oil) in a heavy based pot
- Add the hot stock, olives, bay leaf and thyme and bring the pot to simmering for about 15 minutes until the vegetables are soft
- Add the fish and cook for another 5 minutes
- Now add the cream or milk, cherry tomatoes and season. Beware of boiling as the milk may curdle
- Transfer to a heat proof dish, top with the cauli mash and then top again with the sliced cheddar cheese
- Place under a hot grill for about 15-20 minutes until the cheese is bubbling
- Serve with non starchy veggies
