Dr. Jason Fung is a Canadian world-leading expert on LCHF, especially in treating people with type 2 diabetes and reversing their condition. If you have an interest in type 2 diabetes then I highly recommend watching his videos.
Dr Fung speaks in one of his many lectures on obesity management about how nuts have a very positive impact on lowering insulin spikes, thereby being an effective weight management food.
Todays breakfast is a delicious low carb nutty muesli which can be eaten with Greek yoghurt or cream.
- 80g of sliced almonds
- 50g of sunflower seeds
- 50g of pumpkin seeds
- 50g of roughly chopped hazelnuts
- 1 1/2 tbsp of coconut oil
- 1 tsp of ground cinnamon
- 1 tsp of ground ginger
- 1 tsp of ground mixed spice.
Pre heat the oven to 180 deg C. Melt the coconut oil in the oven on a roasting tray.
Mix all the other ingredients thoroughly in a bowl. When the coconut oil is melted, pour over the nut mixture and mix well with a large spoon.
Return all the ingredients to the tray and roast in the oven for 12-15 minutes until toasted.
